I swear, when I cooked these babies, I crave them for weeks. I can devour a whole pan of these.. if I didn't have any will power.
The best part about this recipe, is that it contains simple ingredients and its extremely simple to cook.
I usually take pictorials for my food blogs.. but I wasn't planning on posting my recipe for this delicious entrée'. But, a handful of friends were asking for my recipe..so this one is for YOU! =)
INGREDIENTS:
- 6 GREEN BELLPEPPERS
- 1-1.5 LBS OF GROUND BEEF OR GROUND TURKEY
- 1 MEDIUIM YELLOW ONION- CHOPPED
- 1 TABLESPOON OF GARLIC POWDER (OR TWO GARLICS MINCED)
- 1 TEASPOON OF SALT
- 1 TEASPOON OF PEPPER
- 1 LARGE ZUCCHINI
- 1 LARGE YELLOW SQUASH
- 2 MUSHROOMS
- A HANDFUL OF BABY CARROTS (OR 1 LARGE CARROT)
- (1) 14.5OZ CAN OF PETITE DICED TOMATOES. (I USE THE ONE WITH GARLIC & OLIVE OIL, OR WITH DICED GREEN CHILIES.)
- (YOU CAN ALSO USE 2 SMALL TOMATOES-INSTEAD OF THE CAN DICED TOMATOES)
- (1) 29OZ CAN OF PUREE TOMATO SAUCE
- 2 cups of Mozzarella cheese
GETTIN' DOWN:
- PREHEAT over to 350 degrees.
- Pour the (29 ounce) can of Pureed Tomato sauce into a baking dish. (My dish was 11inX7in and fits 6 bell peppers in there nice and snugged.) Set baking dish aside.
- Wash off the bell peppers. Cut off the tops and remove seeds.
- In a large pot- boil enough water to completely cover your bell peppers.
- Once water starts boiling- place the bell peppers into the boiling water.
- Boil the peppers for about 10 minutes or until the green color is lighten and peppers are soft. Make sure they aren't over cooked, or too soft that they crack or fall apart. Once cooked take them out of the water and set aside.
- After washing your veggies - Chop them up.
- Sautee the mixed veggies in some olive oil over medium heat. Until soft and onions are transparent.
- Set sautéed veggies aside
- Take your baking dish filled with the Purred Tomato sauce and place it into the preheated oven. Just to warm up the sauce a little.
- Start cooking the ground beef/ ground turkey until fully cooked and browned. While cooking the meat- season with the garlic, salt and pepper.
- Drain any fat/excess oil.
- Mix sautéed veggies in the same pan with cooked meat
- Add the (14.5 ounce) can of petite tomatoes to the meat/veggies mixture and continue cooking mixture for about 5 more minutes. Covered and on low heat.
- Remove the baking dish from the oven and place the bell peppers into the baking dish. With the open tops facing up.
- Start placing some cheese on the bottoms of each pepper. Then fill the pepper with the meat and veggies mixture. Top it off with some more cheese! (YUM!) You can add a little bit of the warm tomato sauce on top of the cheese.
- Place the bell peppers into the oven and bake for about 30 minutes. Everything is already cooked (and the bell peppers should already be soft from boiling them) so, 25 minutes is enough time. You will see after about 20 minutes the cheese is a nice light brown color. You can also lower the heat and bake for longer.
